“Diego Bermudez's Red Plum P-02 is grown at Finca El Paraiso in Colombia as Castillo at 1,960 metres and sold by Good Brothers as unroasted green coffee. Overripe cherries are harvested and ozonated, then fermented anaerobically for 36 hours submerged in water. The coffee is pulped and demucilaginated, a culture medium carrying the Paraiso Red Fruit yeast is pressed into the fermentation tanks for 12 hours, and a thermal shock fixes the precursors before dehumidifier drying. Buy it green and drop the roast shortly after first crack starts.”
