“Mabono Station sits between four hills on the slopes of Mount Elgon, Uganda - Mabono, Namesti, Itimbwa and Bukalasi - giving farmers in these isolated communities a nearby place to sell ripe coffee cherries. Mountain Harvest's micro-washing stations also serve as places for education and demonstration, letting farmers and young people see new approaches to coffee processing within their own communities. Processing Manager Uthman Muluwa began as a casual laborer carrying coffee between production stages, taught himself the work out of genuine interest, and within two years was leading the processing team at Mabono. For this lot, Uthman and his team selected ripe red cherries, floated them for quality, and removed the fruit while leaving the coffee's sticky mucilage intact. The coffee was then dried on raised beds to 11% moisture before resting in a temperature-controlled warehouse.”
