“Luz Helena Salazar is a world-renowned coffee producer known for advanced processing techniques. Her husband Jairo Arcila's coffees have also been stocked by FREAK on several occasions. This lot undergoes 60–72 hours of anaerobic fermentation, during which lychees are added. It is then pulped and dried on beds for approximately 18–25 days whilst the pH and temperature are meticulously controlled, retaining the mucilage until ideal moisture content is achieved.”
