“Velvet Cask explores a softer side of barrel aging. Ripe Chandragiri cherries from Kalyancool Estate in Chikmagalur, grown at 1,300 metres, are honey-processed and slowly dried before the green beans are matured in seasoned oak barrels to build sweetness, wood and aromatic complexity without a spirit-dominated character. Finished at a Light Plus roast, the cup shows vanilla and chocolate-nut richness with subtle red-wood depth and a delicate red-wine finish.”
