“Anarquia is a Pacamara microlot from Metapán, sourced through Alejandro Valiente, who keeps Four Barrel supplied with coffees from across El Salvador. Pacamara comes from a cross of Pacas and Maragogype and makes an almost laughably large bean next to the tiny coffees the shop usually buys; size once implied lower quality, but this variety breaks the rules. The cup is deceivingly complex and intricately acidic, with the tropical character usually expected from an African coffee.”
