“Pecan Pie is a sweet, comforting Peruvian coffee with caramelised sugar, soft stone fruit, and a rounded, creamy body, produced by Joselito Caruajulca Saucedo at La Naciente in San Vicente, Querocoto, Cajamarca, northern Peru. Grown at 2,250-2,350 m, the farm benefits from cool conditions that encourage slow cherry maturation. Only ripe cherries are hand-selected and rested before pulping, then undergo a 48-hour dry fermentation before washing. Drying happens slowly in a covered parabolic dryer with regular turning to preserve cup quality. Joselito manages the farm with organic fertilisers, structural pruning, and careful shade management, steadily building a reputation for high-quality coffee. The result is a clean, balanced cup with sweetness and consistency at its core.”
