Small family farms grow SL28, SL34, and Batian varieties known for intense fruitiness and clean flavor. Cherries are depulped, fermented for about 24 hours, washed, density-sorted, and slowly dried on African beds, preserving the juicy clarity that defines classic washed Kenya.”
