“A washed, special-prep Grade 1 lot from the Bishan Wate washing station in Guji, roasted lightly for espresso. It is immediately expressive yet wonderfully clean, with syrupy sweetness: blueberry and peach iced tea up front, ripe prune depth, then dried apricot, panela and soft toffee, with bright tea-like acidity and a long sweet finish. Cherry from around fifty smallholders is picked at perfect ripeness, floated, depulped the same day, fermented for 48 hours and dried slowly on raised beds for around 21 days.”
