“A washed, special-prep Grade 1 lot from the Bishan Wate washing station in Guji, roasted lightly for espresso. Around fifty smallholders pick cherry at perfect ripeness; the lot is floated for quality, depulped the same day, fermented for 48 hours, then dried slowly on raised beds with plenty of airflow for about 21 days.”
