“Autumn Amber Estate, also known as Qiupo Estate, sits in the Lincang highlands of Yunnan, China, a region that has quietly transformed from a tea monoculture to a specialty coffee origin of rising global recognition. The Yunshang lot represents the estate's flagship selection—hand-picked Catimor cherries processed via a 48-hour anaerobic natural fermentation that amplifies their inherent sweetness and fruit complexity. Yunnan's coffee journey began with mass-market commodity production, but pioneering farms like Autumn Amber have rewritten that narrative through meticulous processing, variety selection, and high-altitude terroir expression. The dramatic diurnal temperature swings at 1600 masl produce dense beans with surprising sugar development, while anaerobic techniques borrowed from wine-making unlock tropical and fermented fruit notes rarely associated with Chinese origin. Ethica Coffee Roasters, now in its second year working with this lot, roasts it for filter brewing to preserve its delicate winey character and fruit-forward profile.”
