“Grown by the Triunfo Verde cooperative in the highland communities of Chiapas, Mexico, between 1,000 and 1,300 m. The co-op was founded in 2000 by smallholder organic farmers and runs environmental education for its members alongside coffee production. Fully washed and roasted medium, it cupped 84 with lime, brown sugar and nougat. Fair trade and organic certified.”
