Highlights
“Alexander and Arley Vargas, father and son, grow this coffee in Palestina, Huila, in Colombia. The variety is Striped Red Bourbon — a natural mutation of Bourbon whose cherries ripen with red stripes — and it is processed as a natural after a 72-hour fermentation, then dried on raised beds for about 15 days. That long fermentation is what turns the cup toward cooked fruit rather than citrus.”
