“This fully washed Guji comes from the Shakiso area where 310 smallholder producers have perfected clean, bright washed processing. After selective hand-picking, cherries are depulped within six hours, fermented for 24-36 hours, then washed through three channels before drying on raised beds over 10-14 days. The cooperative has invested in water recycling systems and quality control, making this both a delicious and environmentally responsible coffee.”
