Highlights
“Eulises Guzman Serrato farms five hectares near La Plata, in Huila, on land where his father taught him the work. He is the third generation of his family to grow coffee there, and the farm has carried them through it all: a steady living, and school for his kids. When he found his way into specialty coffee in the early 2000s, he started reworking every step of how his coffee was grown and handled, and lots like this one are the result. This lot is Pink Bourbon, washed with an extended sealed-tank fermentation. Cherry rests for 15 hours after picking before it is pulped, then ferments for 36 hours in hermetically sealed tanks. From there it dries slowly on raised beds inside a covered, ventilated shed, out of direct sun. In the cup: green grape and apricot with honeydew sweetness and a black-tea finish.”
