“Tome Natural comes from the Oboleyan farm in Ethiopia's Guji zone, between 1,900 and 2,200 m, where heirloom varieties are dried in the whole cherry. Ditta Artigianale roasts to order in Florence, so bags ship close to the roast date rather than sitting in stock. In the cup the floral side leads: jasmine over lemongrass, then a soft honey sweetness, balanced acidity and a rounded body with a long finish. It is a filter-leaning natural that keeps its perfumed top notes instead of turning syrupy.”
