“Sidra Natural comes from Finca La Coqueta in Filandia, Quindío, Colombia, where Juan Bustos grows the Sidra variety. The whole cherry is dried with skin and fruit intact on patios or raised beds and turned regularly over several weeks, so the seed stays in contact with the fruit and the cup carries more fruit-driven intensity and body than a washed coffee. Differente selected and roasted the lot as part of its competition-focused Colombian program. Differente is the Colombian roastery of Carlos Escobar, who won the 2020 Australian Brewers Cup, placed third at the 2025 World Brewers Cup in Jakarta, and won the 2026 Colombian Brewers Cup in Bogota. Carlos roasts the country's top lots where they are grown instead of exporting them as green coffee. The lot is part of an initiative supporting Colombian producers through a difficult period, with part of the proceeds going to the redevelopment of his home region. Differente deliberately publishes no tasting notes, describing experience and character instead of a flavour list.”
