“Pink Bourbon Honey comes from Finca El Ocaso in Salento, Quindío, Colombia, where Santiago Patiño grows the Pink Bourbon variety (Bourbon Rosado on the bag). In honey processing the skin and fruit are removed but part of the mucilage stays on the parchment while the coffee dries, shaping sweetness, texture and overall sensory expression. Differente offers it as a second interpretation of Pink Bourbon alongside its washed lot, from a different farm, producer and region. Differente is the Colombian roastery of Carlos Escobar, who won the 2020 Australian Brewers Cup, placed third at the 2025 World Brewers Cup in Jakarta, and won the 2026 Colombian Brewers Cup in Bogota. Carlos roasts the country's top lots where they are grown instead of exporting them as green coffee. The lot is part of an initiative supporting Colombian producers through a difficult period, with part of the proceeds going to the redevelopment of his home region. Differente deliberately publishes no tasting notes, describing experience and character instead of a flavour list.”
