“Pacamara Experimental Washed comes from Zarza Coffee in Bruselas, Huila, Colombia, where Jhonatan Gasca grows the Pacamara variety — the large-beaned Pacas x Maragogipe cross first developed in El Salvador. Differente labels the lot Experimental Washed: the fermentation stage departs from a standard washed protocol, exploring how controlled fermentation shapes the expression of Pacamara. Differente is the Colombian roastery of Carlos Escobar, who won the 2020 Australian Brewers Cup, placed third at the 2025 World Brewers Cup in Jakarta, and won the 2026 Colombian Brewers Cup in Bogota. Carlos roasts the country's top lots where they are grown instead of exporting them as green coffee. The lot is part of an initiative supporting Colombian producers through a difficult period, with part of the proceeds going to the redevelopment of his home region. Differente deliberately publishes no tasting notes, describing experience and character instead of a flavour list.”
