“Chiroso Experimental Natural comes from Finca Las Flores in Acevedo, Huila, Colombia, where Jhoan Vergara grows the Chiroso variety. It has a special history for Differente: it was one of the first microlots Carlos ever offered and quickly became a customer favourite, and it returns after more than two years away to celebrate his run at this year's Colombian Brewers Cup. Experimental Natural means the fermentation or drying stage departs from a standard natural protocol, an intense and adventurous expression of Chiroso. Differente is the Colombian roastery of Carlos Escobar, who won the 2020 Australian Brewers Cup, placed third at the 2025 World Brewers Cup in Jakarta, and won the 2026 Colombian Brewers Cup in Bogota. Carlos roasts the country's top lots where they are grown instead of exporting them as green coffee. The lot is part of an initiative supporting Colombian producers through a difficult period, with part of the proceeds going to the redevelopment of his home region. Differente deliberately publishes no tasting notes, describing experience and character instead of a flavour list.”
