“Bourbon Ají Experimental Washed comes from Zarza Coffee in Bruselas, Huila, where Jhonatan Gasca grows the Bourbon Ají variety. Jhonatan is one of the producers Differente works with most closely, pairing unusual varieties with carefully controlled fermentation, and Carlos Escobar's roastery selected and roasted this lot to show what that combination can do. The washed process removes the skin and fruit and breaks down the remaining mucilage through fermentation before the coffee is rinsed and dried in its parchment. The Experimental label means the fermentation stage departs from a standard washed protocol, pushing the variety beyond a conventional washed expression.”
