Honduras El Pedregal Espresso

“Reina Morales grows coffee on her farm El Pedregal in the Campanario, Intibuca region of Honduras with her husband and three children, part of the Sueños de Semilla project and producer group. Once picked at peak ripeness, this blended lot of IH90 cherries is placed in sealed plastic bags for a 40-hour anaerobic fermentation, then depulped and transferred to concrete tanks for a second 24-hour dry fermentation. The beans are then spread on raised beds in the shade and slowly dried for 25 to 30 days.”
