“Jose Santos Galeas is a first-generation farmer who bought his six-hectare Los Alpes farm in Jesús de Otoro, Honduras, as a retirement project after decades as a teacher. Now 69, he achieved his first truly profitable sale in 2026 after nearly 30 years of farming. His Parainema cherries ferment for 45 hours in sealed bags in the shade, then 35 hours more after depulping, before slow drying on raised beds over 20-25 days. A long-overdue success story worth celebrating.”
