“Detour built this espresso with composer and pianist Jean-Michel Blais for the release of his album mirador; he cupped samples at home until he picked Gabriel de Carvalho Dias's Bourbon from Cachoeira da Grama in Minas Gerais. The farm has supplied the roastery since 2009, and Detour calls it one of the most consistent relationships on the menu. Each bag carries a QR code to exclusive Blais content. In the cup it is butter, cocoa and roasted hazelnut: rich, sweet and balanced.”
