“Yessica and Diego Parra's Finca El Mirador in Pitalito, Huila, supplied Delicate's first ever contracted coffee - a pink Bourbon - and this Papayo continues the relationship on a new harvest. Only ripe cherries are taken; they are floated, rested 24 hours in open tanks, depulped, then fermented a further 60 hours in open tanks before washing and 2-3 weeks in sun-bed driers, sometimes finishing in mechanical driers. Roasted 19 October 2026.”
