“Halo Beriti washing station was built in 2014 in Gedeb, Yirgacheffe, and takes cherry from around 750 smallholders. Its 'special prep' lots are day lots pulled apart from a limited number of deliveries and sorted to a very high percentage of perfectly ripe fruit, and only a few bags are produced each year. Cherries are depulped the same day, fermented 8-12 hours in open tanks, washed and dried 5-15 days on raised beds. Delicate roasted it 19 October 2026.”
