“Chelbesa's main washing station sits in the Danche locality of Gedeb, Gedeo, where Habtamu Fikadu processes the site's cherries. This is Delicate's second Danche selection: cherries are depulped and fermented 48-72 hours depending on temperature, washed, then held in water another 12 hours before drying 10-12 days on raised beds. The longer ferment turns up the fruit while the bergamot oil stays in the finish. Roasted in Chicago on 21 October 2026 and sold through Hyunah Coffee Club's DROP A.”
