“This Pink Bourbon comes from Finca La Indonesia in La Unión, Nariño, Colombia, produced by Frank Torres. Frank comes from a coffee producing family with more than 80 years of history in the region, managing the farm with a strong focus on processing precision, environmental sustainability, soil health, and responsible water use. Located at 1,750 masl, the farm benefits from Nariño's volcanic soils and diverse microclimates. The cherries are harvested at full maturity, sorted by flotation, then placed in a bioreactor with filtered, ozonated water and a small amount of must from a previous batch. The tank is saturated with CO₂ and held at controlled pressure for 48 hours, with careful monitoring of temperature, pH, Brix, conductivity, alcohol level, and microbiological activity. After fermentation, the coffee is washed, drained on raised beds, and finished with gradual mechanical drying at low temperatures.”
