Highlights
“Santa Monica farm, located in Armenia, Quindio, Colombia, is managed by Jairo Arcila in partnership with Cofinet. This Castillo variety undergoes a 48-hour dry anaerobic fermentation followed by 10 days of controlled drying, using a washed cherry co-ferment process. The result is a vibrantly fruit-forward Colombian coffee with intense sweetness and complexity.”
