“Malawo is a washed Ethiopian Grade 1 coffee produced by Daye Bensa and grown by smallholder farmers in the high-altitude Arbegona region of Sidama. The exceptional highland microclimate allows the 74158 variety cherries to mature slowly, producing dense, complex, and flavour-rich beans. After hand-harvesting, cherries are sorted by density in water flotation tanks before drying on African raised beds for 12 to 15 days.”
