“Araponga lies within Matas de Minas in Minas Gerais, surrounded by the Atlantic Forest, one of Brazil's most biodiverse ecosystems. The region's steep mountain terrain creates a patchwork of microclimates, allowing conditions to vary not only between neighbouring farms, but from one harvest to the next. The result is coffee with more definition and complexity than the classic low-acidity Brazilian profile might suggest. After harvest, the cherries were separated by density and transferred to suspended drying beds. They were arranged in thicker layers for the first two days to encourage gentle fermentation within the fruit. As the moisture content fell, the layers were thinned and the beds covered, allowing the coffee to dry slowly and evenly over approximately ten days.”
