“An Organic-certified Grade 2 lot from the Guji region, grown by roughly 450 smallholder farmers around the town of Shakiso. Traditional Ethiopian heirloom varieties are cultivated organically between 1,800 and 2,100 masl. Cherries are depulped within 6–8 hours of picking, fermented 36–48 hours in tanks, washed clean in channels and then dried slowly on raised African beds under shade netting for 5–7 days.”
