“A third Rumudamo station lot alongside the natural and washed versions, from small plots in the highland village of Rumudamo in Arbegona, Sidama, at altitudes up to 2,300 masl. Cherries are density-sorted by flotation, then fermented in barrels for up to 144 hours before de-pulping and washing. Drying runs 12-15 days on African raised beds with mesh nets, rotated every 30 minutes to control fermentation.”
