“From Pitalito, Huila, Colombia, this Yellow Papayo is produced by Yessica and Diego Parra of Diwan Coffee. The washed process with 60-hour extended fermentation begins with 24 hours of oxidation, then depulping and open-tank fermentation before careful drying over 2-3 weeks. The result is a remarkably balanced cup with bright yellow-fruit notes over a silky, pineapple cake batter texture.”
