“Yirgacheffe in Ethiopia's Gedeo zone is renowned for producing some of the world's most sought after coffees. Its high elevations and extended maturation period of cherries support greater sugar and acid development, resulting in remarkable cup complexity. This microlot was produced from quality cherries handpicked from 11 smallholder growers in the area, each cultivating small plots in Gedeo. The ripe cherries are received at the Chorso Bule wet mill, where they are sorted and carefully dried for 25 days on African drying beds. This coffee from Chorso Bule showcases the remarkable and distinct flavours for which Gedeo coffees are celebrated; a direct result of traditional methods, detailed cherry selection, and rigorous post-harvest protocols. The resulting cup is a clean and classic expression of a fruit forward Yirgacheffe.”
