“Finca La Terraza, farmed by the Lasso Guevara family in La Argentina, Huila, gives this Pink Bourbon its mosto washed process: the coffee is submerged in an active, nutrient-rich mosto liquid recovered from a previous batch of de-pulped coffee. Grown between 1,850 and 1,950 metres, it opens with rose florals, follows with delicate lychee sweetness and closes on a bright, refreshing loquat acidity. Chu Coffee built the cup for slow, calm mornings.”
