Highlights
“Ashenafi Getaneh's black honey lot comes from the Gerse kebele in the Aricha area of Yirgacheffe, grown around 2,100 masl. Cherry is hand sorted for colour, floated to separate lower-density fruit, then pulped on a disc pulper calibrated to leave maximum mucilage on the parchment. A short fermentation follows before the coffee moves to shaded raised beds, where a canopy slows the dry by four to five days so moisture and water activity even out. The cup is lilac and apricot over plum, with CETO scoring it 2/5 funk and 2/5 intensity.”
