“Las Tejedoras is a group of women coffee producers in Chiapas whose commitment to improving farming practices has elevated the standards and quality of coffee in the region. In partnership with Caravela, they have improved their processing techniques in both fermentation and drying, giving more complexity and fruit notes in the cup. Grown at 1,600 MASL, these Bourbon and Typica varieties are washed and fermented for 24-40 hours then sun-dried on concrete patios and palm mats.”
