“Washed JARC 74112 from the Keramo Adara Washing Station, where roughly 1,500 smallholders across the Bombe mountain range in Sidama, Ethiopia deliver their cherry to be sorted, processed and dried. Daye Bensa is the organisation behind the station, and its recent Cup of Excellence results built the reputation this lot rides on. Growing above 2,300 masl makes the beans dense and small; slower maturation of the cherry translates into extra sweetness in the cup. Ceremony roasts it as a classic washed Ethiopian: delicate black tea and cane sugar softness with a bright, lively Meyer lemon acidity and a black-tea-like mouthfeel.”
