“Chiroso is a variety grown in Colombia that carries genetic ties to Ethiopian landraces, and this Transformation lot is a single-variety selection from Ceremony's Rare & Experimental program, brought in through importer Unblended. The Transformation program puts young Colombian producers - here a collaboration of young women producers - in charge of farming and of building their own route to market, so the lot reflects their work start to finish. Grown at 2,000 masl, it is vibrant, floral, sweet and crisp.”
