“El Equimite is Gibrán Cervantes's 'edible forest' in Veracruz, Mexico - one of the few Demeter-certified biodynamic coffee farms in the world, where coffee grows beneath a native canopy beside fruit trees, medicinal plants and a natural lake. The cool, misty cloud-forest climate slows cherry maturation, building sweetness, clarity and complexity. Through his Ensambles project, Gibrán brings neighbouring producers together to share knowledge and explore more sustainable ways of farming.”
