“Elias Roa is a legendary producer in Huila, Colombia with farms in the subregions of Pital and Acevedo. Finca Tamana is planted with many different heirloom varieties, including some with African lineage. The coffee utilizes dry fermentation for 14-16 hours, followed by several washes with fresh water, then transferred to raised beds for slow, meticulous drying. Decaffeinated through the EA (Ethyl Acetate) process common in Colombia.”
