Highlights
“Top-3 farm at Cup of Excellence Mexico 2026. The harvest took place in March, manually selecting only cherries at optimal ripeness, sorted by quality. After a 24-hour rest, the cherries were inoculated with must from the fermentation of a previous lot. pH, Brix degrees and aromatic development were constantly monitored. Once the desired sensory profile was reached, the skin was removed and the cherries returned, without water, to the containers for a second dedicated fermentation. Finally the coffee dried on African beds under rigorous control to preserve all its complexity. Sensorial profile: intensely floral aroma with strawberry notes and a sweet character recalling colorful gummies. In the mouth: mandarin, melon, Froot Loops and watermelon Jolly Rancher — a vibrant, complex and extraordinary cup. 'One of my favorite coffees. I vouch for it. —Sotomayor.'
