“Gema M. Posadas Manzano and her husband carefully manage their two farms at Finca El Río. Harvest was done by selective cutting of cherries at optimal ripeness. After washing and classification, cherries were depulped to begin fermentation: seeds stayed in plastic containers for about 140 hours under carefully controlled fermentation until reaching pH 4. They were then washed and classified again. Drying began with a brief exposure to direct sun to favor draining, followed by a week of rest, then 10 days on African beds under shade. In the cup it expresses its varietals intensely — lemon, nut and dried fruits — while the prolonged fermentation adds depth and volume, with orange, maple and plum notes.
