“Gema and her husband carefully run their two farms. The harvest was manual, selecting cherries at optimal ripeness, then washing and sorting them to process only the best fruit. The cherries were spread on African beds for about 25 days, alternating controlled periods of shade and direct sun depending on the climate. Once dry, they rested in food-grade bags to allow the coffee to stabilize. Sensorial profile: an uncommon Gesha with a particular coriander seed note, accompanied by sweet orange, strawberry and a delicate sensation recalling hot water with sugar.
