Highlights
“Grupo Arábica Colimota is a collective working the Pacific slope of Mexico, and Hacienda San Antonio in Comala, Colima has spent the last few years renewing its fields — this lot is the first taste of that work. The Spanish original describes the protocol: La cosecha se realizó a mano, seleccionando únicamente cerezas maduras; the cherries were classified and pulped the same day, fermented for two days in clean tiled tanks (dos días en piletas limpias, revestidas de azulejo), then washed, drained and dried for 13 days on patios under regulated shade. Estelar's own read of the cup: notable cleanliness, markedly citric acidity, intense sugarcane-like sweetness and a roasted-almond finish — si los sabores fueran colores, este café sería amarillo, verde y un poco naranja.”
