“Finca San Juan del Vesubio sits in the El Chorrito paraje outside Yajalón, Chiapas, at 1,644 masl, and this lot is producer Georgina Utrilla's Bourbon. Estelar chose the least invasive route for the variety: selectively picked and sorted cherries rested a full day in hermetically sealed steel containers, then dried slowly over 35 days on African beds under regulated shade. The result leads with cocoa and raisin aromatics before a bright, mouth-watering grape and redcurrant acidity.”
