“Top-3 farm at Cup of Excellence Mexico 2026. The harvest was meticulous, selecting cherries that reached a 20° Brix sugar level. The cherries were washed and carefully selected before processing: first a 12-hour rest, then a rest in water containers for 96 hours. Finally the cherries were depulped and washed before a slow, controlled drying. Sensorial profile: notes developed during the cherry rests — clean, glossy red fruits, currant and abundant pomegranate. In the mouth it is sweet, with dense body and juicy, bright acidity. A coffee bright like a washed, but red like a natural. Origin: Veracruz, Totutla. Finca Zacatlami. Varietal: Marsellesa. Producers: Miguel Castelán y Helina Tress. Process: Washed, Lote 1726.
