“Second year of Salma Jazmín Cortés Posadas' coffee experiments at Finca Los Naranjos. Cherries were harvested at an intense red ripeness and float-sorted to remove empty fruits, then depulped and fermented under controlled conditions for 36 hours. After fermentation they were carefully washed to remove mucilage and passed through a second classification. Drying began on shade mesh for 1 day and finished on African beds for 11 days with constant movement to ensure even drying. Sensorial profile: sweet and enveloping, recalling a Tootsie Pop — caramel, cherry and a bright currant touch, with a deep sweetness evoking pastry chocolate. Much body, much flavor.
