“Gema and her husband carefully run their two farms. The cherries were harvested in February at optimal ripeness, washed and sorted, then depulped and rested in tanks for 26 hours. After another wash and sort, drying started on shade mesh for 2 days and finished on African beds for 5 days. Sensorial profile: a very juicy cup full of citrus, with a delicate honey note, a particular kiwi memory and a fresh finish with menthol notes. Origin: Puebla, Finca El Río. Varietal: Marsellesa. Producer: Gema M. Posadas Manzano. Process: Washed, Lote ACTL02. Altitude: 1,100-1,250 masl.”
