“Koraput, Odisha, roasted deep. Roasted medium-dark to Depth 64, this single-origin natural Arabica is sweet, dense and round, with the weight to stand up in a milk drink. Espresso recipe: 18 g dose, 38 g yield, 28 s at 93 C, fine grind - change the grind, not the dose, to land at 28 seconds. Also built for the moka pot: medium-fine grind, low heat, off the flame at the first sputter. Tasting: raisin, stewed plum, dark caramel and cocoa; with milk, dried fig and molasses.
